Every time I go visit my grandmother in Usuki, Japan I always make sure to stop by my favorite shop to get some カボス (kabosu) ice cream. If you aren’t familiar with kabosu, it’s like a lime but a little sweeter. It’s a citrus found mainly in the Ōita prefecture, and it’s wonderfully tart and sweet taste can’t help but bring up memories of summers spent catching frogs and playing in the river.
